BORSCHT

INGREDIENTS

  • 10 cups water

  • 3 Tbsp beef-like seasoning

  • 1 large onion, diced

  • 2 garlic cloves, minced

  • 3 medium beets, coarsely grated or diced small

  • 2 carrots coarsely grated or diced small

  • 1 cup diced celery

  • 2 medium potatoes, diced

  • 4 cups shredded cabbage

  • 1 small can diced tomatoes or 3 fresh tomatoes, diced

  • 1 Tbsp lemon juice

  • 1 Tbsp liquid aminos

INSTRUCTIONS

  1. Bring water to a boil.

  2. Add seasoning, onion, garlic, beets and carrots.  Simmer 15 minutes.

  3. Add celery and potatoes.  Cook for another 10 minutes.

  4. Add cabbage, tomatoes, lemon juice and liquid aminos.  Simmer until vegetables are tender.
