VEGGIES AND RICE

INGREDIENTS

  • 1 Tbsp olive oil

  • 1/2 cup chopped onion

  • 1/2 cup chopped celery

  • 1/2 tsp salt

  • 1 cup uncooked brown rice

  • 1 tsp Italian seasoning

  • 2 Tbsp McKay's chicken seasoning

  • 2 1/2 cups water

  • 1 cup frozen peas, thawed

  • 1 red bell pepper, thinly sliced 

  • Chopped parsley

  • Scallions to taste

INSTRUCTIONS

Saute onion and celery in olive oil. Stir in salt, rice, Italian seasoning, chicken seasoning, and water. Cover and cook 35 to 40 minutes until rice is tender. Stir in peas and red bell pepper. Transfer to serving dish. Top with parsley and scallions.
